What Components Make Up Black Pudding?

Black pudding begins with the one ingredient that makes people hesitate: blood. Dried pig’s blood is blended with fat and cereal—usually oats or barley—then seasoned with warming spices like nutmeg, cloves, and herbs that turn something austere into something deeply savory.
